This is spicy Indian One Dish. For additional protein serve with Chicken or Daal.
2 cups cooked Basmati rice or leftover rice
3-4 large ripe tomatoes cut into cubes
2 tbsps vegetable (Olive, canola, sunflower cooking oil)
1 tsp mustard seeds
1 large onion chopped fine
2 green chillies slit lengthwise
1" piece of ginger grated
4-6 cloves of Garlic crushed
2 tsps coriander powder
1 tsp cumin powder
1 tbsp garam masala
Salt to taste
Preparation:
Heat the oil in a deep pan and add the mustard seeds and green chillies. When they stop spluttering add the onion and fry till soft.
Add the tomato, ginger and crushed garlic and mix well. Cook till the tomatoes turn pulpy.
Add the coriander, cumin and garam masala powders, salt to taste and mix well. Cook on a low flame for 3-4 minutes, stirring frequently.
Turn off the fire and add the rice. Mix well.
Serve with pappadums or daal or chicken

I had been to the ewomen's network tonight and met Joe & Denise from WOWGREEN. They started their business recently in Morgan Hill and marketing GREEN cleaning products using enzymes to clean-up the dirty surfaces with the help of surfactanst. I am glad that I cam across another green team who are conscious of the environment. Some of my customers when I am installing their landscapes ask about non-chemical products and perhaps I can mention after I use their products myself
